also, can you build up with this product? you can add thickness with the 3M stuff. I'm going to have to reconstruct and build up as deep as 1/4" - 3/8"

Evercoat 411 is not made for thick applications. It's made to fix small imperfections like pinholes, scratches and small gouges. I would recommend a 2 part material urethane or epoxy material and not poly glaze as the first step. Problem is that most professionals use a dual-mix gun and not the two separate tubes, so it might be hard to get good advice on the products you are looking at because those are aimed at hobbyists.
