The last vette I did was a 54' that I put only epoxy on it. I only epoxy everything I do unless it's a collision job. I always crank the booth to 90 degrees, spray one coat epoxy in the morning, one at lunch, and one at night before I go in. Let it sit a week and was always impressed with the fill ability of the epoxy. I've been resisting the urge to try the poly fill also. I do spray 2coats epoxy to seal the body, then skim coat with filler/glaze putty down to 180 grit and then start my filling with epoxy. Usually the three coats of epoxy over the skim session handles most of the fill I need.
Your gaps look great on the doors. Once everything is straight I block down with 120 and then chase it 180 and I have less plugging since I'm removing the 120 scratches and not removing the orange peel.
Funny Shine, I'd rather eat dust than wet sand. I hate the sludge mess. I was always taught blocking wet so my hands were always looked like old raisins. Grandfather in law that taught me usually rips on me when he comes into the shop because I do certain things different than he taught me.
Looks like it will be a nice car when it's done.
