Sealer Coat

I'm getting ready to shoot my interior and was wondering if a seal coat of epoxy is necessary or can be skipped. I wouldn't even consider skipping it for the exterior. It's all epoxy now and I'm shooting SPI Red SS and Black SS for a two tone dash and maybe door inserts on a '55 Chevy pickup. My understanding is seal coat is primarily to stop bleed through, to give a smoother finish for the base and also for better adhesion. Now that I type all those reasons out I'm wondering why I'm even asking this question, but I'm running out of time and warm weather. Also, how long should I keep the temp @65 or better after shooting the base? Worst case it would probably not dip below 45-50 if I shut the heat off for a week.
