Overnight hours

What I'd like to do is strip a rather large panel at night, then the next morning sand with 80 gritt and spray the epoxy. During the overnight hours, should I spray some temporary rattlecan primer to protect the metal (I have a can of weld-through sitting around on the shelf) that I'll remove when sanding with 80 gritt, or just leave it bare overnight? The car stays in the non-heated garage, never outside.

No need for the rattlecan primer. Overnight in an enclosed garage I bet you won't see anything show up. And if it does, the 80 grit will surely take care of it.

I would think that any flash rust that may occur will be much easier to remove than rattle can paint. I'd leave it bare..

Most rattle can primers are lacquer and will not stop rust,
they let moisture through like a sponge.
