I am not positive but I think I may have mixed euro 5000 clear 2:1 instead of 4:1, What is the problems if I did mix it wrong? I sprayed the last coat of clear around 3:30 - 4 o clock this evening, I just checked 5 hours later and I can leave a finger print on the tape.

If you did it would cure faster not slower. IDK what the issues could be mixed at 2:1 but it would/should cure because you have 2X as much activator in it if you indeed mixed it 2:1. My guess would be that it would be harder and more brittle than normal, probably not have the depth of gloss either. This is really a question for @Barry if he happens to see it.
Can you go back and check how much you used? If everything was new then it would not be hard to see how much activator you have left versus how much clear is left, do a little math and come up with the answer.
 
I would feel better about over-activation than under-activation, but I would probably at a minimum sand and reclear it once it dried. I'd love to know what @BrianK or @AndyK thinks about this so we can give best advice moving forward.
 
I always try to keep my puck atleast until the job is complete. Even if i have to tilt the mixing cup and prop it in the corner. That way if i have a snafu/laps of memory, i can refer back to it and atleast see if it is soft, or crumbling.
