What grit for sanding between coats outside the recoat window?

I painted some parts about a year ago with single stage and I want to sand them and add a couple more coats. Do I go 600 or 800? And any recommendations on a brand?
I'll probably be doing it by hand with a soft block.

I would use 800.

Just a quick follow up question if anyone wants to answer. I'd guess best practice would be to sand with 800 until all the peel is gone, but is it acceptable to leave the very bottom of the peel? the shine specks at to lowest part of the orange peel?

I’ve been wet sanding my single stage parts with 600 if I’ve been doing it between coats.

The peel will “grow” as you add coats. Do not leave any peel imo
