What clear would you use for a mirror flat/level glossy showroom finish on a Guitar?

I have been building guitars for 6 years now. I've used lacquer for the finish and it's worked well. BUT... it's durability is poor and it scratches super easy.

I think it may be time to make the switch to Poly.

I want a finish that is leveled (cut with 1200 after spraying) and brought up to a very high gloss.

Durability isn't a huge issue. Some flexibility is important since wood BUT I'm doubting that any poly would crack. Lacquer does crack in cold weather. Almost always.

My main items are the least amount of sanding to level (good flowout) and easy to cut and buff.

I can plan my production schedule around whatever flash and drying times are necessary. I don't have a drying oven. I dry at room temperature (70F) and spray at this temp as well.

What's my best option in clears?
 
I use Universal Clear on my wood projects.
I picked it because it's very flexible.
The finish is up to you, how well you rub out the finish.
