Two coats is OK if several conditions are met:

You are a wet sprayer.
You don't want to sand ALL the peel out.
You aren't concerned about getting it to last 10+ years

BUT, if you want practice sanding stuff FLAT and buffing, 3 coats is a minimum... In fact, to learn the perfect paint job procedure, you need to clear, sand, clear, sand, buff.. That is 6 coats or even more...
 
why don't ya meet in the midlle and use the euro 5000 at 4:1:1 and a half she lays down slick as snot and gloss retention is still there.production clear is great on the production stuff but if ya want the spi experience go with the euro.besides after the reducer it all works out the same.
 
What I did for a quality base at a low cost to practice with was to watch eBay and my local jobbers for a gallon that was a mismatch. I only gave around $70 for a full gallon of ppg DBC 2000 in a beautiful blue pearl color. You don't get to pick exactly what you want but.... Picking a color is a pain in the rear....
