How should I prep body work and old paint before spraying?

Initially i was just going to wetsand the old paint, which was sprayed around 5 years ago, and do a quick color change on the car, but the body gaps, doors, and hood needed attention. So, now i need to scuff the entire car and then spray with SPI epoxy.

First question: What grit should i use and can i block the car by hand? Due to the sharp lines of the Corvette body, i would like to avoid using a mechanical sander if possible. I've already wet sanded the entire body with 600 grit, but as mentioned, initially i had just planned on doing a color change.

Second question: From what i understand, i need to sand the areas where i did body work with a courser grit sandpaper. Should i spray these areas with two coats of SPI epoxy first, wetsand, then spray the entire car with another coat the next day?

Body work has been done on and around the doors, headlamps, hood, lower valance, and roof. The hood is new
