Epoxy Primer Color Choice

I've been using SPI gray on my 68 charger. So far just engine bay frame rails, inner structured while replacing quarters.

What are the reasons for choosing the primer color? Or is it just a matter of taste?

The different undercoat colors serve to help with coverage later on when painting. The closer your primer shade is to your final color, the less basecoat coats you will need to cover. That only applies to the last primer or sealer coats that are going on the car. It can make a difference of 2-3 coats of base vs 5-6 if the undercoat is way off and basecoat has bad coverage.

To add, the oxide red was created to help restorations look more authentic, I believe it's formulated to be a match to 60's Ford primer.

I usually start with black and do my bodywork and spray another coat of black. Next I spray gray turbo and sand most of it off but stop when I start seeing black. This way you can see any imperfections. Final coat of epoxy depends on body color.
