Epoxy on plywood

Could I use SPI epoxy to seal up plywood for replacing the deck on my pontoon boat?

Yes but, you should check the moisture content of the plywood used. If it was me replacing plywood on a pontoon boat deck, I would use pressure treat plywood. This will give you the highest moisture protection other than using a hardwood. To further protect the pressure treated plywood, I'd seal it with SPI epoxy, I would not paint the end-grain so moisture can escape.

If painting pressure treated wood it needs to sit for a while. Not sure about epoxy but with house paint PT will fail if applied to (green) wood.
Myself I would use marine grade plywood instead of PT

dont put pressure treated on aluminum or you wont have much aluminum left in a few years.
