Clear over wood beam

I'm building a home bar using 147 year old hand hewn wood beams from a old saw mill. I would like to seal the wood to keep spills from sticking or staining the wood. But I'd like to keep it as natural as posiable. Or flat with no gloss or low gloss. I've seen a lot of people are using to part epoxy that you pour on. I'm sure it works and offers lots of protection but it is also high gloss and doesn't leave a rough natural look to the wood. I want to be able to feel the highs, lowes, cracks and knots. My question is if any body knows or has idea is if I brush a thin coat of this 2 part clear epoxy can I go back and spray a coat of UC with flattener in to achieve the look and feel I want with out worrying about adhesion or reactions of the clear. I have cleaned the wood as best I can but there are years of stuff and grime imbedded in these beams along with rusty nails and even charr from a fire that ultimately brought down the building. Any advise would be appreciated
