Single stage spraying sanding questions

More stupid newbie questions regarding laying down the color.
The plan is to spray Automotive Arts Motocryl single stage in a solid color. Spraying over a seal coat of 25% reduced epoxy. I’ll lay down three coats of the Motocryl and most likely block with 600, (is that the correct grit?) and then spray two more coats.
I’m assuming just 3 coats on the hood underside, door jambs and interior will be adequate if I’m not having to do a lot of sanding to flatten or remove trash?
How long does the single stage need to cure before I start sanding?
Do the final 2 coats after blocking need to go down within a certain number of days or could that happen months later?
The TDS says Tack free - 1hr , Polish- 8hr, and Recoat - 12hr, but I’m not clear what that means or how it applies…

One hour, bugs don't stay in there. 8hrs can sand, buff and polish. 12hrs can sand and add more paint. Those are minimum hrs under ideal conditions. Longer times are safer.
Thanks for the response and help. Can the final 2 coats after I sand the first 3 go down months later or do I need to get that done within a certain number of days or hours?

You saved me from posting the same question. Hopefully someone in the know will respond with some insight.
I doubt time would be a factor once it's out of the recoat window.
 
Here‘s the response I got from Chad’s paint supply where I got the single stage:
“As far as the second round of paint you will want to sand it and then apply the paint within a day or two as the scratches tend to close up as paint cures. But if you don't sand it right away you can wait.
OR if you do sand it and let it sit, just make sure you freshen it back up with a grey scotchbrite or a light sand paper.
I usually would like to let it sit a week, sand it and then spray it the following day. ”

I was really glad to hear that I can wait to do my sanding and spray that second round of single stage color. It’s tough for me to get it all done at once and the weather is not cooperating and has gotten cold… I‘m probably going to have to get back to FL before I can get it all done, so will plan to be back on June and finish it up. Hoping I can start and get the first 3 coats sprayed in about a week when it warms up.
 
if you sand clear, no matter how old it is you can reclear no problem. just avoid going finer than 800 grit. that would be max for good adhesion
I’m going with single stage (which I believe is similar to clear) and plan to use 600. Thank you for the response.
