Now what?

My never ending project '69 firebird continues. So far, I stripped to bare metal and primed with SPI epoxy. I lightly blocked that to see where I needed body filler. I applied body filler and blocked that out. I recoated with epoxy and then several coats of SPI 2K urethane (that was probably done in 2014). Did I mention that it was a never ending project? I recently started body work again after all of my mechanical work and shake down runs were done. I started blocking the 2k and still have a few high/low spots here and there, but for the most part things are looking good. I still have over 1/2 gallon of 2K on the shelf. could I use several coats of this to fill the low spots before blocking again, or should I just go to a high build primer?

Okay, good. Next, I have never heard of 110 grit sandpaper. What is it exactly that you are using? At this stage you should be identifying any chips, scratches, and dings, and getting them squared away before final primer.
 
You should probably guide coat that and refine it out to 220-240 before re-priming. But if you have severe low spots like you seem to be saying, you might want to go back a step and fix them with polyester putty.
 
Not sure how well it will come up in the picture, but these are the low areas that didn’t block out. Wondering if I should apply several more coats of 2K, high build, or glaze to get everything flat.

I don't see any metal, so there's more to do. imo. Make the most of the material that is on there, if you are doing so, you should see some metal here and there. if it really is too low, it should get poly putty. That's a judgement call that I could only make in person.
