Flat Matte Clear Pot Life - 30 mins?

I've been experimenting with spraying flat matte clear. Using medium activator. It's upper 60s consistently in garage I'm painting in. Using an Eastwood LT w 1.5 tip.

First coat w 1.5 comes out great! After hanging the gun up for 30 mins, the spray for second coat coming out for several mins is pretty choked up ... maybe half the fan size as before. Either continuing to spray or cleaning out the gun fixes it. The clear is already starting to gum up in 30-40 mins.... least a bit on tip and inside gun.. I thought the pot life on this was a bit longer?

Trying to get this down on small parts so I have a strategy using it on larger painting. This normal? May only mix enough for 30 mins at a time?
 
The gel time is 280 minutes at 70 Degrees, so the problem is gun has buildup somewhere inside and as you spray the matte is building that spec up.
Disassemble gun and clean good.
