Estimating amount of paint needed

I know there are a ton of variables involved. But I'm hoping someone can get me close.

What I'm painting is a 1929 Ford Model A standard Coupe. The only difference is I added a "32 gas tank. I'm painting this car disassembled, one panel at a time.

I've already painted the car with SPI epoxy. Now what I did was epoxy all the non finished paint areas first. I.E.-firewall, wheel wells, interior side of panels, ect... Then I measured the paint and sprayed one wet coat on the finished paint side then poured the remaining paint back in the measuring cup to see how much was left. I did this on every panel, part. If it looked like it took 2.5oz of paint. I rounded it up to 3oz just to be on the safe side. One coat of epoxy on all finished-side parts came out to 49oz. What I'm going to use is SPI 2K Regular Build Primer and SPI SS Black.

Paint guns: Iwata LPH400 1.4 tip for epoxy and SS Black.
For 2K primer I could use some advice also. I'm looking at the DeVilbiss StartingLine 1.8 tip and the Iwata AirGunsa 1.8 tip. Haven't decided yet.

I use 10 oz of RTS (ready to spray) per coat, per panel for estimating purposes. Generally this comes out really close and leaves me some extra paint for those unfortunate times when things go wrong.
Previously I tried figuring as close as possible (like you are) the exact amount of paint. This got me into trouble more than once so I opted for this formula rather than running out of paint.
