Epoxy as sealer clogging sandpaper…thoughts?

Randy at 50 degrees it would take weeks, if it cures at all. Going dormant and minimum temperature are not the same things. Absolute minimum metal/panel temperature (not air) of 65 degrees. 70 is considered safer/better. Unreduced requires 24 hours at that temp. Reduced varies depending on the amount of reducer used.
Not trying to be rude, but honestly if you can't keep it at those temps for the required time then you should use something else. This isn't a product that can be pushed.

Question: would this (sealer) be a use for infrared med wave curing light?
IMO no cause with sealer you have a limited open window to then apply your base coat or SS. Hitting it with an IR will quickly close that window. You can base in 20 minutes after mixing epoxy 1:1:1 @ 70 degrees.
